It’s creamy, light, and decadent. It’s also easy to make (no-bake!), which is critical in my opinion because most of us are short on time and energy. Last but not least, when you compare this chocolate coconut mousse to other desserts, it’s pretty healthy. This recipe is vegan, low carb, and fairly low in sugar. I can’t wait for you to try it!

A Healthy-ish Dessert

Full disclosure: I have a sweet tooth. While I’m also health-conscious and I like to make good food choices, desserts are something that I have a hard time giving up. And why should I? When I weigh everything in the balance, I come to the decision that I enjoy sweet treats too much to omit them from my diet.

That being said, I feel a lot better about reaching for a healthy-ish dessert like this chocolate coconut mousse than a chocolate bar, ice cream, cheesecake, or whatever. And it doesn’t just “do the trick” of satisfying my craving – I absolutely love it. I can also say that friends who try my chocolate coconut mousse also love it, even if they’re not dessert people.

How To Make Chocolate Coconut Mousse

Ingredients

Let’s get to it. There are only 3 ingredients in this recipe for chocolate coconut mousse, which makes 7 or 8 ramekins/servings:

• 2 cans of coconut cream (one can is 400 ml, so that’s 800 ml)
• 1 cup of dark chocolate chips, melted
• A splash of vanilla

What to Do

All you have to do is add each ingredient into a blender and blend well. Then pour the blended mixture into ramekins, cover with plastic wrap or whatever you like to use, and chill in the fridge for about 24 hours. It’s that simple! The longer your ramekins stay in the fridge, the firmer each chocolate coconut mousse will be. Personally, I like them best when they’ve been chilled for 2 or more days, but I’m more than happy to enjoy a chocolate coconut mousse anytime.

Note: I like a very chocolately flavour, so 1 cup of chocolate chips works great for me. However, you can always start out with a smaller quantity of chocolate chips, taste the blended mixture, and adjust to find the right proportions for you. You can also add more chocolate chips. I saw a meme recently that said if a recipe calls for chocolate chips, you can only measure those with your heart, lol. I couldn’t agree more!

If you only have coconut milk in your pantry, that will work too. Just keep in mind that coconut cream gives the chocolate coconut mousse a slightly creamier consistency. Instead of using dark chocolate chips, you can use milk chocolate or even white chocolate chips if that’s your preference. I like dark chocolate chips because they give a more intense flavour and they’re a bit healthier. You can also replace the melted chocolate chips with cocoa powder and powdered sugar. However, I find this method doesn’t give the flavour intensity that I like.
