Jazz Up Your Meals With Coconut Rice
If you’re like me and you get bored with the same old meals, this recipe for coconut rice is a great way to jazz things up. It’s not only simple, easy, and quick – it’s also aromatic, delicious, and nourishing. I suggest enjoying coconut rice with any protein and side of veggies or chickpeas to make a typical meal feel special.
Ingredients:
• 1 cup of jasmine rice (makes about 4 servings)
• 1 400 ml can of full-fat coconut milk
• ¼ teaspoon of salt
Enhancements:
• Zest of 1 lime
• Juice of ½ a lime
• Cashews
• Fresh cilantro or basil
Instructions:
Add your rice, coconut milk, and salt to a pot. On the stove, heat the pot on medium-high until its contents start to boil. Then reduce the heat to low so that it simmers. Cook for 10-15 minutes, stirring frequently.
I find it takes less than 15 minutes for the rice to absorb the coconut milk and when the coconut milk fully absorbs, the rice is cooked al dente. If you prefer softer rice, also add about ¼ cup of water and cook until the rice has absorbed the water, too.
Once the rice is cooked, let the pot cool for 5-10 minutes. If you’re using enhancements, add the lime zest and lime juice, and fluff with a fork.
Add your coconut rice to a bowl with your protein and veggies, then sprinkle your meal with cashews and fresh herbs. Enjoy.
The photo shows how I served coconut rice to my family last week – with leftover roast chicken, sweet potatoes, arugula, and pickled jalapenos. That’s what I had in my fridge at the time.
